This summer we made a quick tour of Parisian chocolate shops with a dear friend, Estelle Tracy. As a native of Paris it was a blast to visit shops, chat with chefs and bean-to-bar makers and just indulge in chocolate with her. These pinecones are inspired by that visit.
Praliné is an uncomplicated confection, delicious and ubiquitous in France. Nuts are roasted and ground with caramelized sugar forming a rough paste with a bit of crunch. At this point inspiration adds flavors to the mix. The praliné paste is set with cocoa butter. There is no actual chocolate in the mixture so it is nutty and rich and delightful.
Three flavors in a box of twelve: pecan with a touch of sea salt; walnut with a sweet and warm spice; and the classic pistachio with cardamom.
