The flavor of chocolate is quite complex. Our experience of chocolate includes 4 of the 5 tastes, acid, sweet, bitter, astringent. Aromas are key to recognizing familiar and nostalgic foods that we are able to name. so flavor is the combination of taste and aroma.

Flavor then is unique to each person. No two people can taste exactly the same way however, sharing this experience is bonding and enlightening, and just fun.

Roasting is an important step in making chocolate. These robust flavors create harmony with coffee and tea and other roasted foods.

The cocoa bean is approximately 50% cocoa butter and it melts at the temperature of our skin. The experience of this fat on the palate is rich and unctuous and that pairs nicely with cheeses and wines.

as far as science can tell us, our ancestors have been sustained with cacao for five thousand years. among the most potent super foods on our globe, it is rich with phytonutrients. Science is continuing to discover benefits of cacao and CHOCOLATE such as enhanced brain-cognitive function, CARDIOVASCULAR support, and mood STABILIZATION. Chocolate truly resonates with our body, mind and spirit.
