Truffle, This is the confection that twisted my 20-something-year-old head and made me a chocolate addict. So get some! Single origin Ecuadorian chocolate blended with cream, butter, a bit of sea salt. Simple, Elegant, it is THE chocolate confection of 19th century France. There is no mushroom in the confection, it is called truffle because it appears like a mushroom dug from the earth.

Caramel Beurre Salé, my version of the classic French salted caramel. Two bitter chocolates enclose a very buttery soft caramel with sea salt.
